I am having some trouble understanding this, do all stars in the universe supernova? Some people say that only massive enough stars supernova, but don't all stars shed their outer layers out into space? Isn't that a supernova? Or what is exactly a supernova? How about stars that actually collapse into themselves? Please help.

A supernova is a violent explosion of a star that spews matter and high energy gamma waves and neutrinos in all directions.
Little puffs off the star is not a supernova
That's the simple explanation. I've explained it in more detail before, you could probably find one of my answers in my profile somewhere regarding supernovae.
