mine is europa, because it is a moon of ice and believed to have water beneath the surface with the plausibility of life.

Europa. It is believed that there may be an ocean underneath its icy surface that could be as warm as 20 C. Those are very promising conditions for life. There's no where else in the Solar System (Besides Earth of course), that we know of, that have conditions that favourable.
I also heard it quoted in a documentary once that if "Europa was the size of a cue ball, it would be just as smooth."

There might be life under them there ice layers!
That alone is the reason why it is the best moon of Jupiter. Honestly the other 60 something of them should be ashamed (except maybe Io because of the geologic activity). Plus you can see it from earth really well. We are already thinking up some clever ways to get there and try to look under the ice. The only problem is that Jupiter is really really really far away and gettin there aint no cake walk.
