The horse and donkey are excellent examples of two different species which can produce offspring, mules, which are almost always infertile. Over more than 2200 years, there have been four or five recorded instances of fertile mules among millions. Just how this happens is not known, but if it happens again you can bet the geneticists will be on to it.
But the point is that the crossbreeding of donkeys and horses averages the genetic makeups of horses and donkeys and reduces the divergence. Therefore it slows or temporarily stops evolution.

Evolution isn't about "creating" anything.
Evolution is a process that takes millions of years to complete. You are talking about humans creating new species and then saying if it doesn't work then evolution isn't true. No, that makes no sense. But I am not surprised, people who think evolution is fake, stay up all night trying to figure out how they can prove that with no education what so ever.

Also, the fact that there's no well defined line between which species can still reproduce with other species, is exactly what you'd expect if common ancestry is true.
