Here http://en.wikipedia.org/wiki/White_people#Origins_of_light_skin, it says humans in Europe's skin didn't get lighter until they adopted agriculture, what does that mean?

I wouldn't believe everything you read on wikipedia, , but the assumption being that when humans reached northern europe they took up agricultures and settled in one place & over generations their skin lightned to absorb more sunlight. or the genetic mutation for lighter skin was an advantage as it allowed more sunligh to be absorbed.

It doesn't actually say that. Rather it reports, that somebody argued the skin only became lighter after the adoption of agriculture in Europe because, that somebody claims, this resulted in an advantage for lighter coloured skin. The article doesn't state that's correct.
The adoption of agriculture is the first use of agriculture by the people concerned. Should you, for example, wander out tomorrow morning and start farming on a convenient piece of land, then you would've adopted agriculture.
