By "flat" scientific mean space-time (which contains at least 3 spatial dimensions) is flat rather than curves. A better way to put it might be "curve-less" instead of flat. It doesn't mean the universe is flat like a door mate but that two parallel lines travelling an infinite distance will never cross.
