Okay, so in this story I am writing, a guy is kidnapped and given to either starve to death or eat foods laced with a poison that will destroy his organs.
So what would happen if you didnt eat? Like I know you would die but how long would it take and what would it be like?
And the same for the poison!

Poison is slightly more tricky, since there are a wide variety of poisons with slightly different effects. But if you are talking about something which will physically destroy the body then you probably want a cytotoxin of some kind, in which case symptoms would include such things as edema, shock, nausea and vomiting, bruising, the formation of blood-blisters, weakness, dizziness, loss of consciousness, and finally - necrosis with a high probability of secondary infections and gangrene.
