Why does South Korea have a humid summer/snowy winter while a city like San Jose has dry summer/mild winter? SJ is closer to the equator than Seoul so I don't understand why Seoul is so humid in the summer while SJ isn't and why it snows in the winter in Korea while it doesn't in SJ.

It has to do with the way the pacific ocean moves partly. The ocean goes clockwise so Korea gets warmer waters (and the weather that goes with it) from the equator. The states on the other hand get the colder water coming down from the north.

Weather of coastal areas has much more to do with ocean currents and ocean-driven air currents than with latitude. Those influences cause both the weather in San Jose and the weather in south Korea.
