They are super magenta inside with sweet meet and seeds. If I dry them out and germinate them, will they grow? Also is the prickly pear the same as the Nopal catus?

For fresh seed - Germination is best after A GA-3 soak, Surface sow the seeds and use 68ºF, With germination spread-out over many months.keep seed trays for 2 or more years to allow complete germination.
Seeds that has been dried and stored will germinate much better and quicker.
