so in essence each string has a different vibration and plays a different note. they are 1 dimensional oscillating lines however, keep in mind that M-theory as not been a proven theory just based on mathematics, several different mathematical theories including supersymmetry and supergravity. also, supersymmetry hasnt been proven to exist either.......
I'm just wondering, what exactly makes these strings vibrate? and how do they know to vibrate in certain ways to create certain quarks?

The amount of tension on each string varies, making the vibration different. A guitar pick used by a plucker, creates certain quarks.
