I understand a vacuum is void of any matter. But is it possible for a vacuum to have greater pressure buy removing even less matter from nothing? For example, say I have a metal container (hypothetically speaking it cannot cave in), and it has a small port where air is removed. Once the air is completely removed, it becomes a vacuum. but what would happen if you kept removing?

nothing will happen coz there is nothing that you can keep removing, over a period of time, you have to do greater work to remove the last molecules and after that whatever you do, nothing will come from there, coz there is nothing to remove.

Imagine a jar with 10 sweets. You remove 10 sweets. Does it mean anything to think abut removing more sweets?
