I have to find the x and y intercepts of 3x + y = 6.
Do I start out by replacing x with 0 to find y and vice versa?

yeap!! just replace x with 0 and find y for y intercept and replace y with 0 and find x for x intercept!!
x = 0 ==> y = 6
y = 0 ==> x = 2
x = 0 ==> y = 6
y = 0 ==> x = 2

Yes replace x and y with 0...
X= 2
Y= 6
X= 2
Y= 6
