Because 2x is just two of whatever 'x' is. Could be cookies or unicorns. Doesn't matter. Take away one 'X' and you are left with one.

This question is like why does 2-1=1 Since all the numbers have the same variable you can treat them like a simple subtraction question. Also the variables that just have x always automatically have a 1 as a coefficient (the number in front of them) So this equation is 2x-1x=1x

Think of X as a variable. A variable can be anything, from 1 to 7 to an elephant. Now if you multiply something by 2 it means you have to of them. For instance 2X means you have two of something. If X is an elephant, than you have two elephants. Now if you subtract or take away an elephant (or X) you get one elephant, or one X.
If you don't like elephants, than think of just Xs. If I have two Xs and subtract one, I now have one X.

You have two X's and when you take one X away, you're left with one more. Think of the X's as apples. You have two apples and when you take one away, you're left with only one apple. The number in front of the X is just telling you how many X's (or apples) you have.
