If you break the yolk and mix it into the white even a little bit, it will cook evenly with the white.......
The white is simple proteins in water. The yolk is mostly fat with complex protein. The density difference is why the fat takes longer. Note that in most chicken eggs, the yolk is about 2/3rds of the volume of the egg. So, being larger, is another reason why it takes longer. If you break the yolk and mix it into the white even a little bit, it will cook evenly with the white.
