For example, if we were to live in space, humans would slowly get thinner bones in order to survive in space without their bones becoming brittle.

Many babies are born with (what we call deformities) They are called deformities or freaks of nature because they are different than the average human. Some grow so they are over 7 feet tall, some grow to be 48" tall...or less. Some have 4 hands, 4 legs. 2 heads...or One eye.
Some are more resistant to diseases and some die if they eat a peanut. This is all evolution. Evolution is never a straight path.
We can only see it happen in many generations. Viruses have very short lives. Influenza(the flu) happens every year and every year they have to make a "new vaccine" for what is most likely to appear because it has appeared somewhere and that has to be counteracted by a Flu shot that will stop it in its tracks...or at least reduce the time that you are sickly.
