It would not be a new species, but it would be a hybrid, and most likely an infertile ones, because we have 1 fewer pair of chromosomes than the greate apes. Sometime in our past, one of our chromosome pairs fused with another pair, resulting in one fewer pair for us. Hybrids between animals with different numbers of chromosomes, such as mules, are infertile.

One scientist from Russia experimented with human ape hybrids, but he was unsuccessful. Later he was imprisoned and died inside a prison for performing these experiments. Since then, no reputable scientist has done similar experiments in public, so we do not know if it is even possible for such a hybrid to be born. The embryo may not even be able to develop to full term in the uterus of either an ape or a human. It may result in miscarriage.

Hybrids between valid species do occur, albeit rarely, in nature. Usually the hybrids will die off because they are less well adapted to the environment than either parental species, or the hybrid is assimilated into the gene pools of one or the other species. The grizzly and the polar bears do occasionally interbreed in nature, without a new species being produced. The coyote and the wolf also interbreed occasionally in nature, but each species remain distinct. Sometimes, however, hybridization can be so extensive that a new species will be produced. It happens most frequently in plants, but it does happen sometimes in fishes and other animals.

If you successfully mated with a chimp or other non-human ape, you wouldn't make a new species. You'd have proven that humans and whatever ape species you did it with are the SAME species.
