The only thing I could imagine is if the crust acts as an insulator. (plus the fact that it's almost ALWAYS a sphere… the densest shape.)

Shape your ice cream and put it on a cookie sheet. Freeze it until it's very hard. Prepare breading and beat eggs. Take the ice cream out. Coat it with flour, then eggs, then the breading. Finally, deep fry, take out, and enjoy!
