If the universe is expanding, and we are slowly moving away from each other (not to mention the sun using up all of its energy), doesn't this mean at some point in the future, we will die out?

The expansion of the universe has no direct correlation whatsoever to the extinction of humans.

Humans could die out, but that has nothing to do with the expansion of the universe.
The sun will make the Earth uninhabitable in about a billion years.
The end of the universe (regardless if it is the Big Chill or the Big Rip) will many trillions of years in the future - its not likely humans will still exist then.

In approximate 10^100 years, it's theorized every single star will have collapse into a black hole and eventually dissolve into oblivion, another theory suggest the universe might begin collapsing in an event called the 'big crunch', only to expand again.
It's sorta depressing isn't it, so at the very least I hope the latter is correct.
