The intended variable (or 'thing' you keep as different on purpose) would be the fact that you are using two different models of mice traps.
Farmer Jones did a pretty bad job at controlling the variables so it's hard to tell what he actually did control. Controlled weather? Controlled overall location (still on the farm)? Stupid Farmer Jones.
Farmer Jones did make the location and bait he uses for the two mice traps different but that does not help to obtain his goal. He also checked the mouse traps at different times. These would be sources of error or unintended variables as it could have affected how many mice were caught.
