Depends on the bullet. In general, bullets go faster than the speed of sound. You would probably hear the gunfire.

Assuming that the person died the instance the bullet strike his head, that person would most likely not hear the gunshot. It also depends on the type of ammunition, most bullets are supersonic (travels faster than speed of sound), but you can get sub-sonic ammunition. If that person is hit by a sub sonic round then he would probable hear the shot before the bullet hits. I doubt he/she can react in time to dodge it.
