I learned vitami B1 as thiamin, today at my moms store I noticed it says thiamine hydrochloride. Also with B3 - its nicotinic acid but I learned it simply as niacin..if I use the simpler terms am I talking about the same thing? I don't want to be learning the wrong thing

The names are usually interchangeable and will be easily understood in an academic setting; so it's not wrong per se.
