I am looking at either becoming an architect or a structural engineer. What I want to know exactly is what structural engineers do. I've seen on films that they have something like little models of the buildings before they build it, so I wanted to know who makes them - the architect or the engineer. If it was the architect that makes them, then what do engineers do?

The architect designs the layout and shape of the building. They make it functional and aesthetically pleasing. They'll choose what materials to use for the outside of the building and possibly the inside as well (though that may be done by an interior designer).
Structural engineers design the internal structure of the building. For a commercial building, it's usually a steel frame and a foundation.
There will also be mechanical and electrical engineers involved who design the plumbing, HVAC, and electrical systems.
Models would typically be done by the architect, as they're designed to what the building looks like, not how it's actually put together.

Lets allow the Structural Engineer (or Civil equally) converts an idea into reality using physics mathematics and a certain grasp of natural forces.
That'll have to do;
All of them consider seven to ten years of training and work experience, yes, more than a doctor.
I have seriously good graduates of eight years standing and I would not let them do anything without checking and supervision... and they are top class bright guys.
