When you place the lettuce in a salad dressing with a lot of salt in it, it means the dressing has more concentration of salt than lettuce. This will cause the water to be absorbed and taken out from the lettuce. As a result it will shrink. When it shrinks it will would mean that it is a hypertonic solution.
Since there is a semipermeable membrane occuring, osmosis takes place.
