Probably because our cells make most of our energy and ATP in the mitochondria. The roll of oxygen is being the final electron acceptor in a process known as electron transfer. Oxygen is also the one that drives the entire process of electron transfer, and electron transfer basically is the fuel for making the vast majority of ATP and energy in our cells.
