Aside from the epistemological argument that nothing can be know absolutely, if you want your question to have any meaning in a real world argument then the answer is yes we do.
Carbon dating is only useful for measuring ages to about fifty-thousand years. It can't get anywhere close to dating the age of a dinosaur, yet alone the age of the Earth. (half-life of ¹⁴C: 5,730 ± 40 years.)
For dating the age of the Earth we use much longer lived radioisotopes; such as, ²³⁸U→²⁰⁶Pb, with a half-life of 4.47[9] years. This can be checked against other radioisotopes assuring an accuracy of less then 1%.
When it is said the Earth is 4.54 ± 0.05 billion years the error of 50 million years one way or the other isn't an admission of being clueless, but an admission of the possible error. If you use your foot as a ruler to pace off 30 steps and your foot is about a foot long you can say that that distance is about 30 feet. Yes, it may be 29 feet or 31 feet, but it isn't 3 feet or 130 feet'.
There are so many independent cross checks which agree time after time, year after year, that doubt is a hopeful inanity of the creationist. There is no set of events that could muck all the methods up, yet allow them to still agree.
Edit: The evidence for any of this isn't hidden away. You are more than welcome to look up any of it you care to. But how would you expect that we could supply the evidence here, in a Q&A forum? If your argument against a billions year old Earth is we won't spoon feed you then go believe the Earth is 6,000 years old. No one cares if you wish to be an idiot. There is absolute, indisputable scientific evidence that Earth is more than 4 billion years old. As you try to nail down a precise age (is it 4.5 billion, 4.6 billion or what?) then the accuracy can be disputed.
Carbon dating is not involved, as carbon-dating cannot extend more than a few tens of thousands of years. At best, carbon-dating can tell us that there were living things (plants, animals) over 20,000 years ago.
Uranium-238 dating is much better for periods longer than a billion years.
