Assuming one day we find a way to travel mass distances in faster time than light, and then have some sort of Mega Telescope and looked back at Earth, could we see the past on Earth?
Like if we travelled instantly 1 light year away from Earth, and then looked back somehow, would we be looking at an Earth 1 year ago?

Yes.
Everything we see, near or far, was in the past. Light takes time to travel from any object to our eyes. The farther the object is from us, the longer it takes for light to make the trip.

Actually, I differ from most of the other answers. In fact, if we traveled that fast, then we would see the FUTURE on Earth. This is because we are always traveling at the speed of light. That is, in time plus in space. The faster that someone travels in space, the slower they travel in time. If that speedster is traveling very fast, then he would actually appear to be moving much slower to a viewer than he really is. For the guy speeding, he would notice everyone on Earth and all of the objects in space moving really quickly. He would age very little while everyone else on Earth would ages a lot. It is not possible to travel FASTER than the speed of light because then the person traveling would age backwards, and therefore not be traveling.

If we could travel far enough away from the earth in a fast enough time and use a "mega telescope" to look back at Earth then yes, theoretically we can look into the past.

I would think that as you look back on the earth, you'd see time moving backwards.
