Using the curvature of the Earth here is not a good example. The universe is most likely globally spatial flat. The Earth is not. The universe is spatially flat, but curved in spacetime, this can't be physically perceived. It can only be indirectly seen by things such as cosmic redshift.

Try this experiment: place marbles on your bed all over the place. They represent planets. The mattress represents space. Next, place a heavy bowling ball in the center of the bed. What happens?

I heard from this one physicist who says that it curves ever so slightly, so we can't detect it. That would be the reason why we don't know. As people have said earlier, space is also huge, so you can't see it.
