This suggestes to me that the juice is somewhat trans[parent thereby allowing light to pass through it easily and be refracted. This is possible in a circular glass since the glass, in conjunction with the liquid then becomes a kind of prism. A prism will divide white light into its constituent clours, ie. virtual "rainbow".
