I understand integrated circuits and logic gates. My question is how does the electrical current actually help to perform the action of the device. (remote, game controller, tv, etc).

Remote devices can either use radio frequency signals or some other media, such as infrared or ultrasonic. With radio signals, there is a high frequency carrier on which is modulated a signal that could be a square wave with a series of pulses that make up a coded signal. A receiver receives the radio signal, rectifies it to extract the coded signal. A decoder interprets the command and causes the required action.

Pulsating infrared signals are also often used. A television remote, among other remote controllers, use infrared. A coded electrical signal, that switches current on and off rapidly, illuminates an infrared emitting LED. The pulsating infrared is detected and decoded by a controller in the television to initiate the required action.
