Multicellular organisms can operate more efficiently because cells can specialize and only do some of the activities needed to keep the organism alive. For example, intestinal cells can specialize in adsorbing nutrients without having to process waste, transport gases in and out of the body. So the intestinal cells can make more nutrient transport proteins and be better at nutrient transport. Likewise lung cells in the alveoli can maintain a thin layer of cells to allow gases pass through and not have to be so durable as to resist physical abrasion like skin cells have to do.
