It seems like one or the other for many people, why does nobody consider we may not know the answer to why life is here, evolution is a theory wrought with assumptions and misleading thinking processes.

In that line of thinking what really is right and wrong? I mean, who decides what is true or real or right? Nearly every moral value we as humans possess comes from a religious background. Is there even such a thing as right or wrong? Are they totally based on perception? And if they are then right and wrong are different for everyone...its not consistent. And in that case...what makes something real? Because we see it, hear it, touch it? What if life is one big hallucination? What if nothing really exists?

It's because they are ignorant and have very convoluted views about both science and religion.
Evolution is as tight a theory as the theory that the Earth revolves around the Sun. Anyone with a good education in Biology will realize that, guaranteed. I can also guarantee that it is not wrought with assumptions and a misleading thinking process. Biology is science, and as such, neither of these things hold up to scrutiny.
I personally don't see why faith and science need to coincide at all, because neither can be proven or disproven by the other. Faith is about feeling good and being a good person, and science is about accepting the facts, observations, and resulting conclusions made about the world.
Unfortunately, the tendency is that, the more religious someone becomes, the more ignorant and convoluted their views on life become. They start to feel like religion needs to affect every aspect of their lives, and they start to take things a little too literally. These are the people who believe that since they are "right about God", that everyone who believes in anything that goes against the literal interpretation of their religion must be with Satan (or applicable evil force).
