I have natural light blonde hair, and if I ever have a child with someone who also has natural platinum blonde hair, and my mom has dirty blonde hair and my dad has strawberry blonde hair, what is the chance of having a baby with platinum blonde hair? Does it depend on what color hair my grandparents have? Or do genes work totally differently?

The genetics behind something like hair color are extremely complicated since there are so many variations. You would have to go several generations down both your and your partner's family trees to get a good idea of the probability of each. Some hair colors (especially red) can disappear and reappear several generations later.
