These are of course minimal interstellar ships as it would take decades to centuries to reach the nearest stars.

At present, it takes 10 years to get as far as Neptune. It is silly to contemplate galactic travel when we have no idea how to achieve travel to the very nearest stars.
PS - the very nearest star is 8000 times as far as Neptune.
The edge of the galaxy is about the same number of times further than the nearest star.
So, the nearest edge of the galaxy is about 60 million times as far as Neptune.
I think that says it all.

we don't have the technology to do that right now...I think the closest thing is a solar sail.
If you can get a decent acceleration (9.8m/s² would do it) you could travel to the center of the galaxy and back in about 60 years (your time)--now unfortunately, nobody will be here when you get back, but you'll still be alive (since millions of years would have passed for people left on Earth compared to you).
I don't think solar sails can give anywhere NEAR that acceleration though.
Furthermore, I'm skeptical as to whether or not solar sails would even get you out of the solar system (since it relies on the solar wind, you NEED that and the further you get out the less solar wind there is).

How?: Fusion or Antimatter powered engines
If you make an ideal spaceship that is very efficient in terms of mass (not a lot of energy is required to push it), then you could load your ship with lots of compressed hydrogen (fusion fuel), of course, assuming by that point, fusion power is perfected so we know how to fuse H1-H1.
The by-product of H1-H1 fusion is Helium, a gas. You can use the energy from the fusion reaction to push the helium out of your ship at a very high speed, pushing your ship forward as an effect.
