Well the mult-iverse is the idea that there could be countless other parallel universes to ours. Imagine a mirror image of our universe existing outside of our own universe as an example. Since this hasn't been proven, we haven't changed the definition of the word universe to incorporate the possibility of all these other theoretical universes.

Multiverse and universe are 2 different concepts. Universe implies that everything is contained in one universe and that there is just one version of reality.
Multiverse implies that there are many different realities or versions of events.

The usage of the word "universe" is arbitrary. The fact that uni- means "one" doesn't really hold any relevance to anything.

Up until not very long ago, nobody knew where the universe ended. It was considered to be infinite, and therefore all-encompassing. It was thought that all of existence was held inside the universe. But then NASA went and stirred the pot by using the WMAP satellite (which detects background radiation) to map the outer borders of the universe based on heat readings. Basically, the satellite detected the heat wave from the original Big Bang from the inside out.

So now we know that there really is an defined border around our universe. The universe is still expanding, but expanding into what? The fact that our universe has an outer extent means that something must exist on the other side of that blast wave that the WMAP detected.

More to the point, if our own universe sprang into existence amid some sort of external void space, then what's to say that another universe doesn't also exist elsewhere within that overarching void space? There could hypothetically be thousands, millions, or infinite other universes that sprang into existence just like ours did.

The fact is that right now we have absolutely no way of knowing what is beyond the edge of our universe. It's all speculation as to what might be out there.
