aboard a space craft, at refrigeration temperatures, with air pressure. I reckon it will not become a semisolid colloid because it will always be moving, but what science / forces would cause its constant movement and its not setting?

jelly sets as gelatin precipitates out of solution as the solution cools. this process is unaffected by gravity. the role of gravity is just to mold the jelly to the shape of its container. I think in space, jelly wouldn't be molded but it would still set, along with randomly dispersed air bubbles.
