Very common in humans too.When little ones are born for the most part their system does not have enough melanin (what causes the color) built up.As they grow and develop that melanin builds causing the eyes to darken.That is not to say that every pair of eyes change, genetic history is also a factor.Does that help?......
I have noticed some big cats in wild and in captivity. Example: Lions Tigers Leopards Jaguars. Have black nose and pink nose. I want to know why and some tigers have blue eyes. I know leopard cubs have blue eyes but get greener when they grow up

You are really only going to find blue eyes in white tigers. It has to do with why they are white too, its just genetics and lacking specific genes. Ever so often you might find a orange tiger with blueish eyes, but if you look at their genetic history you will find that they are probably from the same gene pool as whites. Sadly, white tigers are not a good thing. It can occur naturally but for the most part they are bred to be that way by humans out of greed. They might be pretty to look at but they hold no conservation value and do not good for the species as a whole.

As far as eyes changing color as they grow it is very common in many species, not just cats. Very common in humans too. Some of the big cats are born with a pink nose, and they turn black as the cat matures and ages. Therefore you can tell a young cat from its pink nose. There are some tigers with reduced black pigment. They are called white tigers. They are not true albinos, because albinos have no dark pigment. They are called leucistic. Like other leucistic animals, leucistic tigers have blue eyes.
