I know there are currently many experiments in operation to try and detect it using Germanium at extremely low temperatures.
Shouldn't something have been observed by now? I mean statistically, shouldn't a dark matter particle have come into contact with at least one germanium atom by now?

Dark matter has always been detected (ever since the idea originated). It just only has been detected by gravitational means.
