When milk stays on your glass even though you're done drinking it (science!)

Milk in particular has either a protein or enzyme (the exact name eludes me at the moment) that directly affects this.-Wetting.........
I want to know what it's called when, for example, you have a glass of milk, and you're done drinking it but there's still some milk that stays on the edges of your glass. This also happens with honey, etc, so it's when substances stick to surfaces, I guess?? I completely forget what it's called, and I need it for a science lab! We learned it last year along with viscosity. Thank you so much!!!!!! :) :) :)
