This is a tricky example to find this.
I would say the yeast is the independent variable, and the air in the balloon (the carbon dioxide) is the dependant variable.
I picked these because the yeast is the key change you made to cause a change in the baloon.
Typically the independent variable is the thing you are trying out, and the dependant variable chages based on that (or "depends" on that change.)
