Or are our brains a larger influence? What is matter, do we see things as they are? I'm just curious, haven't found the right words to ask this question yet, but maybe some one can help me. Our brains, ec etc, see things a certain way. What is matter? Does matter affect how things appear? Does matter have a true appearance?

I understand exactly what you're asking. We can never know what reality "really" is. All we will ever know of reality is the model of it that our brain creates from a small amount of sensory input, a lot of internal processing algorithms, and a large store of memories. The model is the way it is because it has been selected for during evolution. Models that described reality in other, non-adaptive, ways were selected out.

Considering appearance is just light reaching our eyes, no. Matter has no defined appearance. It's all about how light reflects off an object.
