I'm a lower sophomore in college taking prerequisites for civil engineering. Problem is, I have no experience in designing any projects, or experience or knowledge in the field whatsoever. What I've done is read some books on mechanics and whatnot. However, I don't know what I can do to be introduced to engineering without actually taking the classes. For example, when someone wants to be an artist, they make a portfolio. How can I do such things with engineering? I have no portfolio.
Would anyone recommend me any books or projects to work on that would introduce me to the field, or at least get me started without having prior engineering knowledge?

Start small projects like building a desks or chairs there are tons of books that can help you do that. And a great project to build for engineering is a light table. A light table is basicly a table with a semi-glass top and a couple of pool lights under neithe. This helps with tons of desgin projects and makes it very easy to trace. Or you could build a tesla coil, it sounds complex but it isn't really. All it is, is a neon sign transformer which could be found at a junk yard or ebay a lot of wired a little electrical connecting. It is really fun to make and there are hundreds of books that can help you build it or any project.
