if this is true (i do not believe in a world wide flood)...wouldn`t all that empty space and the weight of the water...(it says it covered the highest mountain) collapse in on the planet?

There is no "empty space" which occurs naturally within the Earth and there is absolutely no reason to believe there ever was. The porosity in rocks within the crust is filled with brackish water or hyper saturated salt water brines. Alternatively those pore spaces are filled with Oil or Natural Gas. Removal os all of that water would STILL never cause any collapse within the Earth's Crust because the rock itself forms a rigid framework around the pores. We know from studies of all sorts of Igneous and Sedimentary rocks that those pores have always been filled with water and can even tell you the composition of that water and the Temperature at which it formed or entered the rock.
Anyone who points to fossils on top of mountains(that look like modern day organisms) is perpetrating a complete and utter fraud on you and should be admonished for being a liar. It is abundantly well known how those fossils get there and they can all be traced back from structural geology, combined with stratigraphy, to their original flat and usually marine positions of varying geological ages.
The problem with Creationists is that they haven't got even the remotest clue as to what the totality of Geological, Physical and Chemical evidence IS that forms the basis for thee objections to creationism. Our understanding of the Earth although continually changing in detail, is absolutely enormous compared to the very lame arguments that religious folks try to ascribe to geology in order to fit their biblical interpretations! Geologists and Geophysicists have been studying the enormous varieties of cross disciplines, required to unravel the complexity of the Earth, for hundreds of years and by hundreds of thousands of scientists who have published millions of technical articles over time, describing how the Earth got to be this way. These are NOT lame theories, they are documented mechanical processes that must conform to all other branches of science to the letter!
