I can't answer the physical characteristics of the reaction. However, for an aldose to be oxidized, it has to have a hemiacetal [ R---COH] The single bond of the C-OH when oxidized turns into a double bond. A glycoaldehyde is just an aldehyde function attached to an alcohol function as in (HOCH2-CH=O). Also note that in some cases the aldehyde function is oxidized, in some both the aldehyde and alcohol are oxiduzed depending on the oxidizing agent u use
