"malic acid is most present in apples, which can have as much as 75 percent weight/volume of malic acid."
I don't know what this means. Does this mean malic acid provides 75% of an apples weight?

the apple has a total volume. if the apple had a volume of 100ml, 75g of that volume would be malic acid. to determine the mass, you would need the density of the apple to convert volume to mass or vice versa, the density of malic acid to determine the volume from the mass
w/v = mass in volume
w/w = mass in mass
v/v = volume in volume
% w or v in the total volume or mass
w/v = mass in volume
w/w = mass in mass
v/v = volume in volume
% w or v in the total volume or mass

That is impossible because of all the other foods in apples.
Maybe the questioner meant to put a decimal point before 75%, which would be less than one percent, and more logical.

The Wikipedia nutritional data concerning apples does not include malic acid.
