In short, human insulin controls our insulin levels better because it's, well... human.

The different insulins have different amino acid sequences which impact things like insulin-receptor binding, and availability within blood plasma. The pharmacokinetics (fancy word for the way the drug behaves inside the body) are different from animal insulin and human insulin. Also, because there will be an amino acid difference in animal insulin, it may not have the same binding affinity as the human insulin

We even have modified forms of our own insulin that biotech companies have made. Some allow the gradual precipitation of insulin to mimic basal insulin secretion rates while some variants are engineered to prevent insulin polymers from forming which would prevent the instant availability of insulin as it is injected.
