A simple way of understanding this is bread making. Yeast is used to raise the dough. This is actually fermentation. The yeast organisms take the sugars and starch from the grain (wheat, rye, etc) and expel alcohol as a cellular waste product. This alcohol not only gives flavor to the bread, but also acts as a natural preservative (somewhat- nothing is perfect). Cheese making, sausage, salami, etc. are other examples of centuries-old techniques. The water sanitation I'm not so sure about.
