Because JPL hasn't invented a way to reposition the planets to where they were when they launched Voyager. They were exploiting an extremely rare but very convenient alignment of planets which allowed for probes to gravitationally slingshot from one planet to the next.
The next shot at such a multi-planet mission to the outer solar system will come in about 140 years.

There's a probe orbiting Mercury, ,one orbiting Saturn, one in orbit around the asteroid Vesta, one orbiting the Moon, one on the way to Mars, one on the way to Pluto and one being launched in a few months to Jupiter.
