hope this answers your questions

The number of planets is indefinite.the most is 3 as seen in our own system and the Gliese581 system. For the sun,the habitability zone extends from the orbit of Venus to the orbit of Mars,Earth is in the middle of it so we enjoy the best conditions our sun could offer.

It is possible But would most probably end up colliding with each other or revolving around a common barycenter, example Pluto/Charon,or forming a satellite,Like our moon.

Binary Systems revolve around a barycenter,i.e they revolve around a common point in space. If a planetary system does manage to coalesce, then it is a confirmation that the tidal/gravitational effect of the companion star is negligible, otherwise The protoplanetary disc would have a low chance of coalescing,an example demonstrated by Jupiter on the asteroid belt.Jupiter prevents the Asteroid belt from coalescing.

It would most definitely cause bright nights, surface irradiation or permanent daylight for long periods of time.

you're welcome
