I've been interested in the Theremin for years now and I still haven't figured out how does the energy for the volume of a Theremin comes from.

A Theremin converts electrical energy (from he power supply) to sound. Your hands are just the controls.
Like on a radio, there are volume and tone controls which alter the sound. The controls don't supply energy.
In a Theremin your hands are controls which alters the sound's frequency. Your hands don't supply energy, just control it.

All the energy for the theremin comes from the electric power lines. The theremin consists of electronic oscillators which generate the tones and control the volume. An audio amplifier amplifies the output and feeds it to loudspeakers.
