You would have to do it to every cell in your body. They make copies of themselves, based on their genetic code.

Probably not in any holistic sense. We can affect the genes of specific cells but unlikely to ever make a coordinated change to all the cells in the body to transform into something else.
But that may not be necessary. Our DNA has all the capability to go from a clump of undifferentiated cells to a complete human being. There are countless genes that are either not expressed or expressed only at certain points in our life and development and for some cells not others. But all of these cells have the same DNA. What may be possible is to develop all the master switches to turn on or off any gene expression we want for any Targeted cells. And perhaps there are unknown possible gene expressions in our DNA that we have never seen. Once you can do that, you can engineer just about any shape of form of human you want
