If they could really do that, we wouldn't need doctors. No, they're just making it up.

The basic theory of iridology is that the iris shows the state of different parts of the body. Technically, any change in the body, particularly the balance of chemicals, has to have an effect on things like the iris. Those same chemical changes can also be seen in the hair, the nails, the skin, and so on.
Good ones tend to be quite precise in what they detect through looking at the eyes. But usually it's related to diet and other aspects of what our body takes in, including what we drink. The biggest problem is that the technique is not as exact as many good practitioners claim, and bad practitioners can't pick up the nuances, but they use the same observations to make their claims.
I've met a few "good" ones and a lot of "bad" ones (ratio is about 1 good one for 20 bad ones). And looked at their results with a wide variety of people. Most can detect simple things like colonic problems and unhealthy diets and give reasonable advice on what should be done. But, for finer detail, the good ones are right (compared to proper medical investigations) about 80% of the time, which is better than most medical diagnosticians (about 50% right against the same measures) who haven't run the whole battery of tests to isolate the problem.
My own trouble is that the iridologists can't detect many physical problems, like my knees, which have a cartilage problem, or muscle problems. With dietary related things, they do a better job than most trained dieticians.
